Easy, Healthy, and Tasty Dinner
A few weeks ago, I read a section in Vegetarian Times about dinners that you could make with a microwave and items that you could keep around your (fridge-equipped) office. Though some of the items were a bit of a stretch for making in an office kitchen, they all looked tasty (as usual), and they did require only a microwave. That inspired me to try something a little different when I made a quick dinner last night: microwave-only preparation (with good results, even).
I had some leftover pasta in my fridge with sauce and extra seasoning already mixed in, but I hate eating just pasta with a thin layer of sauce for dinner. It feels only marginally better than the “thin layer of fruit between a pastry shell” that you would get with a Pop Tart. Unfortunately, I didn’t have the fresh vegies around to make a salad like I normally would, but I had some frozen veggies in my freezer. So here’s the menu I created:
- Reheated Spaghetti Puttanesca
- Vegetable Medley with Fresh Basil and Grated Romano
- Ice Cold Tangerine Fruition
For the vegetable medley, I combined a little from a bag of frozen broccoli, cauliflower, and carrots and a little from a bag of frozen corn kernels. I steamed both in a mug in my microwave (rather than my usual stove-top veggie defrosting cycle), and seasoned with fresh basil, salt, pepper, and a drop of hot sauce. Then I topped the whole thing with some grated Romano cheese I had sitting around in my fridge.
It may not look exciting to you, but I thought it was quite exciting (considering that I made it all in my microwave and didn’t feel completely unhealthy when I was done.
